Ingredients

1 lb ground chicken

1 cup cooked quinoa

1/2 cup feta cheese, crumbled

1/2 cup finely chopped fresh spinach

1/4 cup sun-dried tomatoes, finely chopped

1/4 cup red onion, finely diced

2 cloves garlic, minced

1 large egg

1 tsp dried oregano

1 tsp dried basil

1/2 tsp ground cumin

Salt and pepper, to taste

1/4 cup fresh parsley, chopped

Olive oil, for frying

Greek yogurt or tzatziki sauce, for serving (optional)

Instructions

Prepare the Mixture: In a large mixing bowl, thoroughly combine the ground chicken, cooked quinoa, crumbled feta cheese, chopped spinach, sun-dried tomatoes, diced red onion, and minced garlic. Mix until all ingredients are evenly integrated.

Add Binding Agents: Incorporate the egg, dried oregano, dried basil, ground cumin, and a sprinkle of salt and pepper. Mix until you achieve a sticky, cohesive mixture that holds together well.

Shape the Patties: With clean hands, divide the mixture into portions and shape each portion into patties approximately 2-3 inches in diameter and about 1 inch thick. You should end up with around 8-10 patties, depending on your size preference.

Cook the Patties: Heat a skillet over medium heat and add a drizzle of olive oil. Once the oil is shimmering, carefully place the patties in the skillet, making sure not to overcrowd the pan. Cook each side for about 4-5 minutes or until they are golden brown and have reached an internal temperature of 165°F.

Drain Excess Oil: When the patties are fully cooked, transfer them to a plate lined with paper towels to absorb any excess oil.

Serve and Garnish: Serve the patties warm, accompanied by a dollop of Greek yogurt or tzatziki sauce on the side. Garnish with freshly chopped parsley for an extra touch of flavor and color.
