2 medium sweet potatoes, peeled and cut into small cubes

8 oz (225 g) maple sausage links, sliced (or your favorite breakfast sausage)

1 small yellow onion, diced

2 cloves garlic, finely minced

1 red bell pepper, diced

1 teaspoon smoked paprika

½ teaspoon ground cinnamon

Salt and black pepper, to taste

2 tablespoons olive oil

4 large eggs

Fresh parsley, finely chopped (for garnish)

Preheat the Skillet: Begin by heating 1 tablespoon of olive oil in a large skillet over medium heat. Once heated, add the diced sweet potatoes. Sauté for about 10 minutes, stirring occasionally, until the sweet potatoes soften and develop a slight golden-brown color.

    Cook the Sausage: Next, push the sweet potatoes to one side of the skillet, creating space for the sausage. Place the sliced maple sausage links in the empty side of the skillet. Cook for 3-4 minutes, allowing the sausage to brown nicely.
