4 medium-sized beets, trimmed and scrubbed

3 tablespoons extra virgin olive oil

2 tablespoons pure maple syrup

1 tablespoon balsamic vinegar

1/2 cup crumbled feta cheese

1/4 cup walnuts, roughly chopped

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh parsley, finely chopped

Zest of 1 lemon

Preheat Oven: Preheat your oven to 400°F (200°C) so it's ready for the beets.

    Prepare Beets: Individually wrap each beet tightly in aluminum foil. Arrange them on a baking sheet to catch any juices during roasting. Roast in the preheated oven for about 45-60 minutes, or until a fork easily pierces through them. Cooking time may vary depending on the size of the beets.

      Cool and Peel: Once roasted, carefully remove the beets from the oven. Allow them to rest for 10-15 minutes, making them easier to handle. Unwrap the foil, and using your hands or a paper towel, gently rub the skins off each beet.
