1 medium acorn squash

3 tablespoons pure maple syrup

2 tablespoons extra virgin olive oil

1 teaspoon ground cinnamon

1/2 teaspoon freshly grated nutmeg (if available)

1/4 teaspoon fine sea salt

1/4 teaspoon freshly ground black pepper

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 tablespoons pecans, chopped (optional for added texture)

1 tablespoon pumpkin seeds (optional for topping)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). To make cleanup easier, line a baking sheet with parchment paper.

    Prepare the Acorn Squash: Carefully slice the acorn squash in half lengthwise. Using a spoon, scoop out the seeds and stringy pulp from the center. Once cleaned, cut each half into 1-inch thick rings, yielding about 8-10 rings.

      Make the Maple Mixture: In a small mixing bowl, combine the maple syrup, olive oil, ground cinnamon, freshly grated nutmeg, sea salt, black pepper, and thyme. Whisk everything together until the mixture is well blended.

        Coat the Squash Rings: In a large mixing bowl, place the acorn squash rings. Drizzle the maple mixture over the rings and toss gently, ensuring that each ring is thoroughly coated with the flavorful glaze.

          Arrange on the Baking Sheet: Lay the coated acorn squash rings out in a single layer on the prepared baking sheet. If there’s any leftover maple mixture, set it aside to use for basting later.

            Roast the Squash: Place the baking sheet in the preheated oven and roast the squash rings for about 25 minutes. At the halfway point, brush the tops of the rings with the reserved maple mixture to enhance their flavor and glaze.

              Add Nuts (if using): After the initial roasting time, carefully take the baking sheet out of the oven. Sprinkle the chopped pecans and pumpkin seeds over the squash rings for an extra layer of crunch.
