Ingredients

1 medium head of cauliflower (approximately 4 cups when riced)

1 cup shredded mozzarella cheese (plus an additional ½ cup for topping)

½ cup grated Parmesan cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon Italian seasoning

½ teaspoon salt

¼ teaspoon black pepper

Marinara sauce (for dipping)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper to ensure easy removal of the breadsticks later.

Rice the Cauliflower: Remove the green leaves and stem from the cauliflower. Cut it into smaller florets and place them in a food processor. Pulse until the cauliflower resembles small grains of rice. If you don’t have a food processor, a box grater works well too.

Cook the Cauliflower: Transfer the riced cauliflower into a microwave-safe bowl. Cover it with a microwave-safe lid or plate, and microwave on high for about 5-6 minutes, or until tender. Once cooked, let it cool for a few minutes.

Remove Excess Moisture: After cooling slightly, place the cooked cauliflower into a clean kitchen towel or cheesecloth. Gather the cloth tightly and twist to squeeze out as much moisture as possible. This step is vital to ensure your breadsticks are crispy.

Mix the Dough: In a large mixing bowl, combine the drained cauliflower, 1 cup of shredded mozzarella, grated Parmesan, eggs, garlic powder, Italian seasoning, salt, and black pepper. Stir with a spoon until all ingredients are thoroughly mixed and a dough-like consistency is achieved.

Shape the Breadsticks: Transfer the mixture onto the prepared baking sheet. With your hands or using a spatula, gently spread and shape the dough into a rectangular slab, approximately ¼ inch thick.

Bake the Base: Place the baking sheet in the preheated oven and bake for 15-20 minutes. The edges should turn golden brown, and the top should feel firm to the touch.

Add Cheese Topping: Once the base is baked, carefully remove it from the oven. Evenly sprinkle the remaining ½ cup of shredded mozzarella cheese over the hot base, allowing it to melt into the dough.

Final Bake: Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is bubbling and golden brown.

Slice and Serve: Let the breadsticks cool for a few minutes before slicing them into individual sticks. Serve with marinara sauce on the side for delightful dipping. Enjoy your delicious low-carb snack!
