Ingredients

2 lbs russet potatoes, peeled and quartered

1 cup heavy cream

4 tablespoons unsalted butter

1 cup shredded sharp cheddar cheese

½ cup sour cream

4 slices of crispy bacon, crumbled

¼ cup green onions, finely chopped

Salt and pepper, to taste

½ teaspoon garlic powder

½ teaspoon onion powder

Instructions

Boil the Potatoes: In a large pot, place the peeled and quartered russet potatoes. Fill the pot with cold water, ensuring the potatoes are fully submerged. Add a generous pinch of salt. Bring the water to a boil over medium-high heat. Once the water is boiling, reduce the heat to a gentle simmer and cook the potatoes until they are fork-tender, which should take approximately 15-20 minutes.

Drain and Steam: Once cooked, carefully drain the potatoes in a colander. Allow them to steam for about 5 minutes. This steaming process eliminates excess moisture, resulting in fluffier mashed potatoes.

Mash the Potatoes: Transfer the drained potatoes to a large mixing bowl. Using a potato masher or an electric hand mixer, mash the potatoes until they reach a smooth and creamy consistency.

Add the Cream and Butter: In a small saucepan, gently heat the heavy cream and unsalted butter over low heat until the butter is completely melted. Once melted, pour this warm mixture into the bowl of mashed potatoes. Mix thoroughly until the potatoes are well combined and creamy.

Mix in the Extras: To the creamy potatoes, add the shredded sharp cheddar cheese, sour cream, garlic powder, onion powder, and salt and pepper to your taste. Stir until all ingredients are fully incorporated and the cheese has melted slightly into the potatoes.

Stir in Bacon and Onions: Carefully fold in the crumbled crispy bacon and finely chopped green onions, saving a small amount of each for garnishing later.

Taste and Adjust: Take a moment to taste your loaded mashed potatoes. At this point, feel free to adjust the seasoning, adding more salt, pepper, or garlic and onion powder if desired.

Serve: Spoon the creamy loaded mashed potatoes into a large serving dish. Garnish with the reserved bacon, chopped green onions, and extra cheddar cheese if you like. Serve immediately while warm and enjoy the comforting flavors of your delicious loaded mashed potatoes!
