Ingredients

1 cup unsweetened Greek yogurt

1/4 cup honey or maple syrup (adjust to taste)

Zest of 1 lemon (about 1 tablespoon)

1/4 cup freshly squeezed lemon juice (about 2 lemons)

1 cup fresh blueberries (plus extra for garnish)

1/2 teaspoon pure vanilla extract

1/4 teaspoon salt

1 cup granola or crushed graham crackers (for the crunchy base)

Instructions

Prepare the Base:

    - In a medium mixing bowl, combine the granola or crushed graham crackers with 1 tablespoon of melted coconut oil or unsalted butter. Mix thoroughly until all crumbs are evenly coated.

      - Line an 8x8-inch baking dish with parchment paper, ensuring the paper hangs over the edges for easy removal later. Press the granola mixture firmly and evenly into the bottom of the dish to form a solid base. Place the dish in the freezer to set while you prepare the yogurt layer.

        Make the Yogurt Mixture:

          - In a large mixing bowl, add the Greek yogurt, honey or maple syrup, lemon zest, lemon juice, vanilla extract, and salt. Whisk the mixture vigorously until it is smooth and creamy, ensuring all ingredients are well incorporated.

            Add the Blueberries:

              - Carefully fold in the fresh blueberries into the yogurt mixture. Be gentle to prevent the blueberries from bursting and to maintain their shape.

                Assemble the Bars:

                  - Remove the baking dish from the freezer. Pour the yogurt and blueberry mixture over the chilled granola base, using a spatula to spread it evenly and smoothly across the surface.

                    Chill:

                      - Cover the dish tightly with plastic wrap or aluminum foil. Place it in the freezer and chill for at least 4 hours, or until the mixture is fully set and firm to the touch.

                        Slice and Serve:

                          - Once the bars are set, lift them out using the parchment paper overhang. Place the solid block of bars onto a cutting board and slice into squares or rectangles as desired. Garnish with additional fresh blueberries on top for a decorative touch.

                            Enjoy:

                              - Serve these blissful bars immediately as a refreshing snack or dessert. If not consumed right away, store any leftovers in an airtight container in the freezer for future enjoyment.

Prep Time: 20 minutes | Total Time: 4 hours 20 minutes | Servings: 9 bars

Optional Presentation Tips: For an extra touch, serve the bars on a colorful platter and drizzle with a bit of honey or maple syrup before presenting. Add a few mint leaves for a pop of color.
