Ingredients

2 cups plain Greek yogurt

1/2 cup freshly squeezed lemon juice (approximately 3-4 medium lemons)

Zest of 2 lemons

1/2 cup honey or maple syrup (adjust based on your desired sweetness)

1/4 cup water

A pinch of salt

Optional: Fresh berries (such as raspberries or blueberries) for added flavor and vibrant color

Instructions

Prepare the Yogurt Mixture: In a large mixing bowl, pour in the plain Greek yogurt. Add the freshly squeezed lemon juice, lemon zest, honey (or maple syrup), water, and a pinch of salt. Using a whisk, mix the ingredients together until the mixture is smooth and well combined, with no lumps remaining.

Taste and Adjust for Sweetness: Take a moment to taste your yogurt mixture. If you prefer a sweeter popsicle, feel free to add extra honey or maple syrup, one tablespoon at a time, until it reaches your desired sweetness.

Incorporate Fresh Berries: If you’re looking to enhance the flavor and visual appeal of your popsicles, gently fold in the fresh berries of your choice into the yogurt mixture. This added touch will create delightful bursts of fruity flavor in your popsicles.

Fill the Molds: Carefully pour the yogurt mixture into your popsicle molds, being sure to leave a little space at the top of each mold. This space will accommodate the expansion of the mixture as it freezes.

Insert Sticks: If your popsicle mold is designed with built-in sticks, insert them at this time. If not, place the molds in the freezer for about 1 hour until the mixture starts to firm up, then carefully insert wooden sticks into each popsicle.

Freeze Until Solid: Allow the popsicles to freeze for a minimum of 4-6 hours, or until they are completely solid. For best results, it’s ideal to leave them overnight.

Release the Popsicles: To easily remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds. This will help loosen them, allowing you to gently pull the popsicles out without breaking.

Serve & Enjoy: These refreshing homemade lemon yogurt popsicles are perfect for a hot day or as a delightful snack! Serve them on a colorful plate or in a cup, and enjoy the zesty explosion of flavors!
