Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

2 tablespoons poppy seeds

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 large egg

½ cup buttermilk (or substitute with ½ cup milk plus ½ tablespoon vinegar)

¼ cup vegetable oil

Zest of 1 large lemon

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

For the Glaze (optional):

1 cup powdered sugar

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or greasing it with a light coat of cooking spray.

Mix Dry Ingredients: In a spacious mixing bowl, combine the all-purpose flour, granulated sugar, poppy seeds, baking powder, baking soda, and salt. Whisk these ingredients together until they are well mixed and free of lumps.

Combine Wet Ingredients: In another bowl, crack the large egg and whisk it together with the buttermilk, vegetable oil, lemon zest, fresh lemon juice, and vanilla extract. Whisk until the mixture is smooth and all elements are integrated.

Combine Mixtures: Gently pour the wet mixture into the bowl containing the dry ingredients. Using a spatula, carefully fold the mixture together until just combined. It’s essential to avoid overmixing; a few small lumps are perfectly fine.

Fill Muffin Tin: Using a scoop or spoon, fill each muffin cup in your prepared tin with batter, ensuring you fill each cup about ¾ of the way full to allow for rise.

Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes. They are done when a toothpick inserted into the center of a muffin comes out clean.

Cool: Remove the muffins from the oven, letting them cool in the tin for about 5 minutes. After that, transfer the muffins to a wire rack to cool completely, allowing air to circulate.

Prepare the Glaze (optional): If you choose to add a glaze, mix the powdered sugar with fresh lemon juice and lemon zest in a small bowl. Whisk together until the mixture achieves a smooth consistency.

Serve: These delightful lemon poppy seed muffins can be enjoyed warm or at room temperature. They are perfect for breakfast, brunch, or as a light snack throughout the day!
