For the Dough:

2 ¼ cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

¾ cup warm water (110°F/43°C)

1 tablespoon olive oil

1 teaspoon sugar

½ teaspoon salt

For the Lemon Sauce:

1 cup ricotta cheese

Zest of 2 lemons

1 tablespoon fresh lemon juice

2 tablespoons honey

1 teaspoon vanilla extract

Pinch of salt

Toppings:

1 cup mozzarella cheese, shredded

½ cup goat cheese, crumbled

1 small red onion, thinly sliced

1 cup arugula, lightly dressed with olive oil

Fresh basil leaves, for garnish

Lemon wheels and extra zest, for garnish

Instructions
 

Prepare the Dough:

    - In a small bowl, combine the warm water, sugar, and active dry yeast. Stir gently and allow it to sit for about 5 to 10 minutes until it becomes frothy.

      - In a large mixing bowl, mix together the flour and salt. Create a well in the center, then pour in the frothy yeast mixture and olive oil.

        - Gradually mix the flour into the wet ingredients until a dough begins to form. Knead the dough on a floured surface for about 5 to 7 minutes, or until it feels smooth and elastic.

          - Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm environment until it doubles in size, approximately 1 hour.

            Make the Lemon Sauce:

              - In a medium bowl, whisk together the ricotta cheese, lemon zest, fresh lemon juice, honey, vanilla extract, and a pinch of salt. Mix until the mixture is smooth and creamy. Set aside.

                Preheat the Oven:

                  - Preheat your oven to 475°F (245°C). If you're using a pizza stone, make sure to place it in the oven while it heats up.

                    Assemble the Pizza:
