Ingredients

For the Lemon Pepper Tilapia:

4 tilapia fillets (approximately 6 ounces each)

2 tablespoons extra virgin olive oil

Zest of 1 lemon

2 tablespoons freshly squeezed lemon juice

1 teaspoon freshly cracked black pepper

1 teaspoon sea salt

1 teaspoon garlic powder

1 teaspoon dried oregano

1 tablespoon fresh parsley, finely chopped (for garnish)

For the Garlic Spinach:

8 cups fresh spinach, thoroughly washed and dried

3 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper, to taste

Lemon wedges, for serving

Instructions

Prepare the Marinade:

In a small bowl, blend together the olive oil, lemon zest, lemon juice, black pepper, sea salt, garlic powder, and oregano until well combined. This mixture will infuse the tilapia with vibrant flavor.

      Marinate the Tilapia:

Arrange the tilapia fillets in a shallow dish. Pour the marinade evenly over the fillets, ensuring they are well coated on both sides. Cover the dish with plastic wrap and refrigerate for at least 20 minutes to allow the flavors to meld.

          Cook the Tilapia:

Heat a large skillet over medium-high heat. Once the skillet is hot, add 2 tablespoons of olive oil. Carefully remove the tilapia from the marinade and place the fillets in the skillet. Cook for 3-4 minutes on each side until the fish is golden and flakes easily with a fork. Once done, transfer the tilapia to a plate and keep warm.

              Prepare the Garlic Spinach:

In the same skillet, add 3 tablespoons of olive oil over medium heat. Once heated, add the minced garlic and sauté for about 30 seconds until fragrant, taking care not to let it burn.

                  Sauté the Spinach:

Add the fresh spinach to the skillet, gently tossing it with the garlic. Season with red pepper flakes, salt, and pepper to taste. Stir frequently and cook for about 2-3 minutes until the spinach is wilted yet vibrant green.

                      Plate the Dish:

On each plate, create a bed of the sautéed garlic spinach and place a tilapia fillet on top. Garnish with a sprinkle of fresh parsley for a pop of color. Serve with lemon wedges on the side to enhance the dish with an additional burst of citrus flavor.

                          Enjoy:

Serve immediately to enjoy the freshness and brightness of your Zesty Lemon Pepper Tilapia with Garlic Spinach!
