Ingredients

1 lb (450g) large shrimp, peeled and deveined

3 medium zucchinis, spiralized into noodles (zoodles)

4 cloves garlic, minced

1 lemon, zested and juiced

1/4 cup (60ml) chicken or vegetable broth

2 tablespoons olive oil

1 teaspoon red pepper flakes (adjust according to your spice preference)

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Optional: 1/4 cup grated Parmesan cheese for topping

Instructions

Prepare the Zucchini Noodles: Using a spiralizer, spiralize the zucchinis into long, noodle-like strands. If you don't have a spiralizer, a julienne peeler works well, or you can opt for pre-spiralized zucchini from the grocery store for convenience.

Sauté the Garlic: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic along with the red pepper flakes. Sauté for about 1 minute, just until the garlic becomes fragrant, taking care not to let it burn.

Cook the Shrimp: Add the peeled and deveined shrimp to the skillet. Season generously with salt and pepper. Sauté the shrimp for about 2-3 minutes on each side, or until they turn a lovely pink and opaque. Take care not to overcook the shrimp, as this can make them tough.

Add Broth and Lemon: Pour in the chicken or vegetable broth, and then add both the lemon juice and the zest. Stir well to combine all the ingredients in the skillet. Allow to cook for an additional 2 minutes so that all the flavors meld together beautifully.

Incorporate the Zoodles: Gently add the spiralized zucchini noodles to the skillet. Toss everything together, ensuring the zoodles are coated with the sauce and mixed with the shrimp. Cook for another 2-3 minutes, just until the zoodles are tender yet still have a slight crunch.

Finalize and Serve: Remove the skillet from heat. Taste the dish and adjust the seasoning if necessary. Serve it hot, garnished with freshly chopped parsley. For an extra touch of flavor, sprinkle grated Parmesan cheese over the top, if desired.

Enjoy!! Dig in immediately and relish the vibrant, fresh flavors of this delicious dish.
