8 oz. fettuccine pasta

2 cups broccoli florets, cut into bite-sized pieces

1 lb. boneless, skinless chicken breast, cut into bite-sized pieces

4 cloves garlic, finely minced

1 medium lemon, zested and juiced

1/2 cup low-sodium chicken broth

1/4 cup heavy cream

3 tablespoons olive oil

1 teaspoon red pepper flakes (optional, for added heat)

Salt and black pepper, to taste

1/4 cup freshly grated Parmesan cheese

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until al dente. During the last 3 minutes of cooking, add the broccoli florets to the pot. Once everything is cooked, drain and set aside, reserving 1/2 cup of the pasta cooking water for later use.

    Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken pieces generously with salt and pepper. Add the chicken to the heated skillet and cook for approximately 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Once done, transfer the chicken to a plate and set aside.

      Prepare the Lemon Garlic Sauce: Using the same skillet, reduce the heat to medium and add the remaining tablespoon of olive oil. Add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute or until the garlic is fragrant, being careful not to let it burn.

        Add Liquids: Pour in the chicken broth along with the lemon juice and lemon zest. Allow the mixture to simmer for about 2 minutes, letting it reduce slightly. Then, lower the heat and stir in the heavy cream until fully combined and creamy.

          Combine Ingredients: Return the cooked chicken along with the drained fettuccine and broccoli to the skillet. Gently toss everything together, ensuring that the pasta and chicken are well coated with the creamy lemon garlic sauce. If the mixture appears dry, gradually incorporate some of the reserved pasta water until the desired consistency is achieved.

            Finish with Cheese: Remove the skillet from the heat and stir in the grated Parmesan cheese, mixing until it melts and combines into the sauce. Taste the dish and adjust the seasoning with additional salt and pepper if needed.

              Garnish and Serve: Serve the pasta hot, garnished with freshly chopped parsley and an extra sprinkle of Parmesan cheese on top for an added touch of flavor.
