Before diving into the mixing and baking process, it’s important to preheat your oven to 400°F (200°C). Preheating is crucial because it ensures that your scones start baking at the right temperature, allowing the butter to create steam, which leads to a light and fluffy texture. While the oven is warming up, line a baking sheet with parchment paper. This not only prevents sticking but also makes cleanup a breeze. If you don’t have parchment paper, you can lightly grease the baking sheet, but parchment paper is highly recommended for the best results.

Ingredients

2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup unsalted butter, cold and cubed

1 cup fresh blueberries (or use frozen blueberries, thawed)

Zest of 1 lemon

1/2 cup heavy cream

1 large egg

1 teaspoon vanilla extract

1 tablespoon lemon juice

Extra flour for dusting

Optional: 1/2 cup powdered sugar + 2 tablespoons lemon juice for glaze

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to prevent the scones from sticking.

Mix Dry Ingredients: In a large mixing bowl, use a whisk to combine the flour, granulated sugar, baking powder, and salt. Ensure the mixture is evenly mixed and well aerated.

Cut in Butter: Add the cold, cubed butter to the bowl with the dry ingredients. Using a pastry cutter or your fingers, blend the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces scattered throughout.

Add Blueberries and Lemon Zest: Carefully fold in the fresh blueberries and lemon zest using a spatula or your hands. Take care not to crush the blueberries during this step.

Mix Wet Ingredients: In a separate bowl, whisk together the heavy cream, large egg, vanilla extract, and lemon juice until they are fully combined and frothy.

Combine Wet and Dry Mixtures: Pour the liquid ingredients into the bowl containing the dry ingredients. Gently stir the mixture until just combined. Be cautious not to overmix, as this can result in tough scones.

Shape the Dough: Lightly flour a clean surface and turn the dough out onto it. Knead the dough gently just a few times until it's cohesive. Pat it into a round shape about 1-inch thick. Cut the dough into 8 wedges or use a round cutter for a classic scone shape.

Bake the Scones: Arrange the shaped scones on the baking sheet, ensuring they have a little space between them. Bake in your preheated oven for approximately 15-20 minutes. They should be golden brown on top, and a toothpick inserted into the center should come out clean.

Glaze (Optional): For a delightful glaze, combine the powdered sugar and lemon juice in a small bowl. Mix until smooth. After the scones have cooled for about 10 minutes, drizzle the glaze over the scones for an extra touch of sweetness.

Serve and Enjoy: Serve the scones warm or at room temperature. They are an ideal accompaniment to tea or coffee, making for a delightful treat any time of day!
