Zest of 1 lemon

Juice of 2 lemons

1/2 teaspoon red pepper flakes (optional; adjust according to spice preference)

1/4 cup grated Parmesan cheese (substitute with nutritional yeast for a vegan option)

Salt and freshly ground black pepper, to taste

Optional garnish: additional fresh basil leaves and lemon slices

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the chickpea pasta and cook according to the package directions until al dente, typically between 6-8 minutes. Once cooked, remember to reserve 1 cup of the starchy pasta water for later use. Drain the pasta in a colander and set it aside.
