8 oz sweet potato noodles (dangmyeon)

2 cups fresh spinach

1 medium carrot, julienned

1 bell pepper (any color), thinly sliced

1 medium onion, thinly sliced

4 shiitake mushrooms, sliced (or your favorite mushrooms)

2 cloves garlic, minced

3 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 tablespoon sugar or honey

1 teaspoon sesame seeds (for garnish)

2 green onions, thinly sliced (for garnish)

Optional protein: 1 cup cooked beef, chicken, tofu, or shrimp

Instructions
