Ingredients

1 cup cooked, shredded chicken (rotisserie chicken works wonderfully!)

1/2 cup BBQ sauce (use your favorite store-bought or homemade variety)

1 cup shredded cheddar cheese (feel free to mix it up with a cheese blend)

1 cup corn kernels (fresh, canned, or frozen all work)

1/2 cup diced bell peppers (use a mix of colors for a fun presentation)

4 large flour tortillas

2 tablespoons olive oil or butter, for cooking

1/2 teaspoon garlic powder (optional for added flavor)

Sour cream and chopped green onions for serving (optional, but recommended)

Instructions

Prepare the Chicken Mixture:

    - In a medium mixing bowl, combine the shredded chicken, BBQ sauce, corn, diced bell peppers, and garlic powder (if using). Stir well until all ingredients are fully coated with the BBQ sauce, ensuring an even distribution of flavors.

      Assemble the Quesadillas:

        - On a clean flat surface, lay out the flour tortillas. On one half of each tortilla, sprinkle a generous handful of shredded cheddar cheese. Next, scoop a portion of the BBQ chicken mixture on top of the cheese, then add a little extra cheese on top of the chicken to help the quesadilla seal when folded.

          Fold the Quesadillas:

            - Carefully fold the empty half of the tortilla over the filled side, covering the chicken mixture. Press down gently along the edges to ensure it seals properly.

              Cook the Quesadillas:

                - Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat. Once hot, add 2 quesadillas to the skillet (or cook them one at a time if your skillet is smaller). Cook for approximately 3-4 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese inside has melted.

                  Slice and Serve:

                    - Once cooked, remove the quesadillas from the skillet and let them rest for a minute before slicing. Cut each quesadilla into wedges and serve warm, accompanied by sour cream and chopped green onions for dipping.

                      Enjoy!

                        - Revel in the smiles as your kids savor their tasty, cheesy BBQ chicken quesadillas!
