Ingredients

1 lb large shrimp, peeled and deveined

1 cup walnuts

1/2 cup cornstarch

1/2 cup all-purpose flour

2 large eggs, beaten

1/2 cup mayonnaise

1/4 cup honey

1 tbsp freshly squeezed lemon juice

1 tsp sesame oil

1/2 tsp salt

1/4 tsp ground white pepper

Vegetable oil, for frying

Chopped green onions, for garnish

Instructions

Prepare the Walnuts: In a small skillet, toast the walnuts over medium heat for about 3-5 minutes until they are golden and fragrant. Stir continuously to avoid burning. Once toasted, remove from heat and allow to cool completely.

Make the Sauce: In a medium bowl, whisk together the mayonnaise, honey, lemon juice, sesame oil, salt, and white pepper until smooth and creamy. Taste the sauce and adjust the sweetness or acidity according to your preference. Set it aside for later.

Prepare the Shrimp: Rinse the shrimp under cold running water and then gently pat them dry with paper towels. This step is essential to ensure the coating adheres properly during frying.

Coat the Shrimp: In one shallow bowl, mix the cornstarch and flour together. In a second bowl, have the beaten eggs ready. Take each shrimp, dredge it in the cornstarch-flour mixture, shaking off any excess. Then dip it into the beaten eggs, making sure it is fully coated.

Fry the Shrimp: Heat about 2 inches of vegetable oil in a deep skillet or frying pan over medium heat (around 350°F). Carefully add the shrimp in batches, ensuring not to overcrowd the pan. Fry them until they turn golden brown and are cooked through, about 3-4 minutes per batch. Use a slotted spoon to remove them and drain on paper towels.

Combine It All: In a large mixing bowl, gently toss the fried shrimp with the honey sauce until they are entirely coated. Then, carefully fold in the toasted walnuts for added crunch.

Serve: Spoon the honey walnut shrimp onto a serving platter and garnish with chopped green onions for a burst of color and freshness.
