Ingredients

For the Honey Dijon Chicken:

4 boneless, skinless chicken breasts

1/4 cup Dijon mustard

1/4 cup honey

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

For the Roasted Veggies:

2 cups broccoli florets

2 cups baby carrots, halved (if large)

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon Italian herbs (such as oregano and basil)

Instructions

Preheat the Oven: Set your oven to 425°F (220°C) to ensure it is hot and ready for roasting the vegetables and chicken.

Marinate the Chicken: In a medium-sized mixing bowl, blend together Dijon mustard, honey, olive oil, minced garlic, dried thyme, paprika, salt, and pepper until smooth. Add the chicken breasts to the marinade, coating them thoroughly. Allow the chicken to marinate for a minimum of 15 minutes at room temperature, or for enhanced flavor, place it in the refrigerator for up to 2 hours.

Prepare the Veggies: While the chicken marinates, prepare your vegetables. In a large bowl, combine broccoli florets, halved baby carrots, sliced red bell pepper, and sliced yellow bell pepper. Drizzle the vegetables with olive oil, sprinkle with salt, pepper, and Italian herbs. Toss gently until the vegetables are evenly coated with the oil and seasonings.

Roast the Veggies: Arrange the vegetable mixture in a single layer on a large baking sheet lined with parchment paper for easier cleanup. Place the sheet in the preheated oven and roast the vegetables for 20-25 minutes. Halfway through the cooking time, stir the veggies to ensure they roast evenly and develop a nice caramelization.

Cook the Chicken: If there is space, place the marinated chicken breasts in a separate baking dish and place it in the oven alongside the vegetables. Bake for 25-30 minutes, or until the chicken achieves an internal temperature of 165°F (75°C). If needed, check the chicken with a meat thermometer to ensure it is fully cooked.

Serve: After cooking, remove the chicken and roasted vegetables from the oven. Allow the chicken to rest for a few minutes before slicing it into thick pieces. Plate the honey Dijon chicken and serve it with a generous side of roasted veggies. Garnish your dish with freshly chopped parsley for a burst of color and flavor.

Enjoy! Savor this delightful meal that marries the sweetness of honey with the tangy flavor of Dijon, perfectly pairing with the savory roasted vegetables.
