Ingredients
  

  • 1.0 lb jumbo shrimp, peeled and deveined
  • 3.0 tbsp olive oil
  • 2.0 tbsp fresh lemon juice
  • 2.0 cloves garlic, minced
  • 1.0 tsp paprika
  • 1.0 tsp dried oregano
  • 1.0 tsp dried thyme
  • 0.5 tsp red pepper flakes (optional)
  • None to taste salt
  • None to taste pepper
  • None for garnishing fresh parsley or cilantro
  • None soaked wooden skewers

Instructions
 

  • In a mixing bowl, combine the olive oil, lemon juice, minced garlic, paprika, oregano, thyme, red pepper flakes (if using), salt, and pepper. Stir well to make the marinade.
  • Add the shrimp to the bowl and toss until they're evenly coated with the marinade. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours for maximum flavor.
  • Thread the marinated shrimp onto soaked wooden skewers, leaving a little space between each shrimp to ensure even cooking.
  • Preheat your air fryer to 380°F (190°C) for about 5 minutes.
  • Place the skewers in the air fryer basket in a single layer, ensuring they aren't overcrowded. Cook at 380°F (190°C) for 8-10 minutes, flipping halfway through, until the shrimp are pink and cooked through.
  • Once done, carefully remove the skewers from the air fryer and let them rest for a minute. Garnish with freshly chopped parsley or cilantro and serve with lemon wedges.

Notes

Soak wooden skewers in water for 30 minutes to prevent burning.
