Ingredients

2 medium ripe bananas

1 cup rolled oats

1/2 cup almond flour

1/4 cup honey or maple syrup

1/4 cup dark chocolate chips (optional)

1/4 cup crushed walnuts or pecans (optional)

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/2 tsp baking powder

Pinch of salt

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). While the oven heats up, line a baking sheet with parchment paper to ensure easy cookie removal later.

Mash the Bananas: In a large mixing bowl, take the ripe bananas and use a fork or potato masher to mash them until they reach a smooth consistency.

Combine Wet Ingredients: To the bowl of mashed bananas, add the honey or maple syrup along with the vanilla extract. Stir the mixture thoroughly until all ingredients are fully combined.

Mix Dry Ingredients: In a separate bowl, whisk together the rolled oats, almond flour, ground cinnamon, baking powder, and a pinch of salt. Make sure everything is well combined to create an even texture.

Combine Mixtures: Gradually add the dry ingredients to the wet banana mixture. Stir gently until just combined to maintain a good texture. If you choose to include chocolate chips and/or nuts, gently fold them into the dough at this stage.

Scoop the Dough: Using a spoon or a cookie scoop, drop tablespoon-sized portions of the dough onto the prepared baking sheet. Place them about 2 inches apart to allow for spreading during baking.

Flatten the Cookies: With the back of a spoon, gently press down on each cookie dough mound to flatten them slightly. This will help the cookies maintain their shape while baking.

Bake: Carefully place the baking sheet into the preheated oven. Bake for 12 to 15 minutes, or until the edges of the cookies turn a light golden brown.

Cool: Once baked, remove the baking sheet from the oven and let the cookies cool on it for about 5 minutes. After that, transfer them to a wire rack to cool completely.
