1 can (15 oz) chickpeas, thoroughly rinsed and drained

1 large cucumber, diced into bite-sized pieces

1 red bell pepper, diced

½ red onion, finely chopped

1 cup cherry tomatoes, halved

1 ripe avocado, diced

¼ cup fresh parsley, finely chopped

2 tablespoons fresh lemon juice

1 tablespoon extra virgin olive oil

1 teaspoon ground cumin

Salt and black pepper, to taste

4 large whole wheat or spinach wraps

Optional: ¼ cup crumbled feta cheese or vegan cheese for a dairy-free option

Prepare the Chickpeas: In a large mixing bowl, add the rinsed and drained chickpeas. Using the back of a fork, lightly mash them—aim for a mix of smooth and whole chickpeas to maintain texture.

    Combine Vegetables: To the chickpeas, add the diced cucumber, red bell pepper, finely chopped red onion, halved cherry tomatoes, diced avocado, and chopped parsley. Stir gently to mix these fresh ingredients together.

      Make the Dressing: In a small bowl, whisk together the freshly squeezed lemon juice, extra virgin olive oil, ground cumin, and a pinch of salt and black pepper. Taste the dressing and adjust the seasoning if needed.

        Mix Everything: Drizzle the dressing over the chickpea and vegetable mixture. Carefully toss the ingredients until they are evenly coated in the dressing.
