Ingredients

2 cups rolled oats

1 cup unsweetened applesauce

1 cup fresh or frozen blueberries

1/2 cup almond butter (or your favorite nut butter)

1/4 cup honey or maple syrup

1/4 cup chopped nuts (e.g., walnuts or almonds)

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

Optional: 1/4 cup dark chocolate chips or coconut flakes for added flavor

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper, making sure to leave some overhang on the sides for easy lifting once the bars are baked.

Mix Wet Ingredients: In a large mixing bowl, combine the unsweetened applesauce, almond butter, honey (or maple syrup), and vanilla extract. Use a whisk or spatula to mix these ingredients together until the mixture is smooth and uniform.

Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, chopped nuts, ground cinnamon, and salt. Stir the dry ingredients thoroughly to ensure there are no clumps and everything is evenly distributed.

Incorporate Mixtures: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Carefully fold in the blueberries, taking care not to crush them too much to preserve their shape and burst of flavor.

Spread the Mixture: Pour the oat mixture into the prepared baking dish. Use a spatula or your hands to press the mixture down firmly and evenly, making sure it fills all corners of the dish.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

Cool: Once baked, let the bars cool in the pan for about 10 minutes. After this, use the parchment paper overhang to lift the baked mixture out of the pan. Transfer to a wire rack to cool completely.

Cut and Store: Once fully cooled, cut the mixture into 10-12 bars. Store the bars in an airtight container in the fridge for up to a week, or freeze them for longer shelf life.
