1 tablespoon olive oil or butter

1 cup hatch green chiles, roasted, peeled, and chopped (canned can be used if fresh are not available)

1/2 cup shredded cheese (cheddar or pepper jack are excellent options)

4 large flour tortillas

1/2 cup diced tomatoes

1/4 cup chopped fresh cilantro

1/4 cup sour cream (optional)

Salsa for serving (optional)
