4 large eggs

1/4 cup milk

1 tsp ground cumin

1 tbsp olive oil

4 whole wheat pitas

1 cup shredded sharp cheddar cheese

1 ripe avocado, sliced

Fresh cilantro, finely chopped (for garnish)

Instructions
 

Prepare the Chicken: Begin by seasoning the chicken breasts generously with ground cumin, smoked paprika, salt, and pepper. In a large skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, carefully add the seasoned chicken breasts. Cook for approximately 6-7 minutes on each side, or until the chicken is fully cooked through and beautifully golden brown. Once cooked, remove the chicken from the heat and let it rest for a few minutes before slicing it into bite-sized pieces.

    Cook the Eggs: In a medium mixing bowl, whisk together the eggs and milk until well combined, seasoning lightly with a pinch of salt and freshly ground black pepper. In a separate non-stick skillet, pour in the egg mixture and cook over medium heat, stirring continuously, until the eggs are fully cooked and softly scrambled. Remove the skillet from heat and set the scrambled eggs aside.
