Prepare the Hatch Green Chilies: If using fresh chilies, roast them by placing them under a broiler or on an outdoor grill until they are charred and blistered. Once roasted, allow the chilies to cool so you can handle them, then peel off the charred skins and dice them into small pieces.

    Make the Cheese Mixture: In a medium bowl, combine the shredded sharp cheddar cheese, shredded pepper jack cheese, and the diced roasted Hatch green chilies. Stir until well mixed, ensuring the chilies are evenly distributed throughout the cheese. Set aside.
