Ingredients

1 cup cooked black beans (canned or homemade)

1 cup roasted Hatch green chilies, chopped

1 cup cooked brown rice or quinoa

½ cup corn kernels (fresh or frozen)

½ cup diced tomatoes (fresh or canned, drained)

¼ cup diced red onion

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper, to taste

4 large flour tortillas or whole wheat wraps

1 cup shredded Monterey Jack or cheddar cheese (optional)

Fresh cilantro, finely chopped, for garnish

Lime wedges, for serving

Instructions

Prepare the Filling: In a large mixing bowl, combine the cooked black beans, chopped roasted Hatch green chilies, cooked brown rice or quinoa, corn kernels, diced tomatoes, diced red onion, and minced garlic. Mix thoroughly until all ingredients are well incorporated. Season the mixture with ground cumin, smoked paprika, and salt and pepper, adjusting to your taste preferences.

Warm the Tortillas: Heat a non-stick skillet over medium heat. Place one tortilla in the skillet, heating it for about 30 seconds on each side until it becomes soft and pliable. This will ensure easy wrapping later. Repeat this process with the remaining tortillas, stacking them on a plate.

Assemble the Burritos: On each warmed tortilla, spoon approximately 1 cup of the prepared black bean filling into the center. If desired, sprinkle a generous amount of shredded cheese on top of the filling for extra creaminess.

Wrap It Up: Carefully fold in the two sides of the tortilla toward the center over the filling. Then, starting from the bottom, roll the tortilla upwards tightly, ensuring the filling is securely enclosed within. Repeat this step for each burrito.

Heat the Burritos (Optional): If you prefer a crispy exterior, return the assembled burritos to the skillet, seam-side down. Cook for about 2-3 minutes on each side, or until they are golden brown and crispy. This step is not mandatory but adds a wonderful texture!

Serve: Once golden and crispy (if cooked), remove the burritos from the skillet. Optionally slice them in half for easier eating and garnish with freshly chopped cilantro. Pair with lime wedges on the side to add a refreshing zing to every bite!
