2 medium zucchinis, sliced into 1/2-inch thick rounds

250g halloumi cheese, sliced into 1/2-inch thick slabs

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar (preferably aged)

1 teaspoon dried oregano

1 clove garlic, finely minced

Salt and freshly ground black pepper, to taste

Fresh parsley, roughly chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Marinate the Zucchini: In a large mixing bowl, whisk together the olive oil, balsamic vinegar, dried oregano, minced garlic, and a generous sprinkle of salt and pepper. Add the sliced zucchini to the bowl and toss gently until all slices are evenly coated with the marinade. Cover and let marinate for at least 15 minutes, allowing the flavors to penetrate the zucchini.

    Preheat the Grill: While the zucchini is marinating, preheat your grill or grill pan over medium-high heat. Ensure the grill grates are well-oiled to prevent sticking, which will help in achieving those coveted grill marks.
