2 cups vegetable broth or water

1 red bell pepper, diced

1 medium zucchini, sliced

1 medium yellow squash, sliced

1 cup cherry tomatoes, halved

1 medium red onion, sliced

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

½ cup feta cheese, crumbled (optional)

¼ cup fresh parsley, chopped (for garnish)

Cook the Quinoa: Begin by rinsing the quinoa under cold water in a fine mesh strainer to remove any bitterness. In a medium saucepan, combine the rinsed quinoa with the vegetable broth (or water). Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or until the quinoa is soft and the liquid has been absorbed. Once cooked, remove from heat and allow it to sit, covered, for an additional 5 minutes. Finally, fluff the quinoa with a fork to separate the grains.
