Ingredients

4 slices of rustic sourdough bread

2 large, juicy ripe tomatoes, sliced

4 ounces of creamy fresh mozzarella cheese, sliced

1/4 cup fresh basil leaves, lightly packed

3 tablespoons extra virgin olive oil, divided

1 tablespoon balsamic vinegar for marinating

Salt and freshly ground black pepper, to taste

1 teaspoon garlic powder (optional, for extra flavor)

A pinch of red pepper flakes (optional, for a hint of heat)

Instructions

Prepare the Tomato Mixture: In a medium-sized bowl, gently toss the sliced tomatoes with a generous pinch of salt, a few cracks of black pepper, and the balsamic vinegar. Allow the mixture to rest for about 10 minutes; this will enhance the tomatoes' flavor and create a delicious marinade.

Assemble the Sandwiches: Place two slices of sourdough bread on a clean cutting board. On each slice, layer a couple of slices of fresh mozzarella cheese. Follow this with a layer of the marinated tomato slices and top with the fresh basil leaves. If you're using garlic powder and red pepper flakes, sprinkle these over the top, then drizzle a teaspoon of olive oil on each. Close the sandwiches with the remaining slices of sourdough bread.

Heat the Grill Pan: Preheat a grill pan over medium heat. While the pan heats up, brush both sides of the assembled sandwiches with the remaining olive oil. This will ensure they get a beautifully crispy finish.

Grill the Sandwiches: Once the grill pan is hot, carefully place the sandwiches on it. Grill for about 3-4 minutes on each side or until the bread is golden brown and crispy, and the mozzarella has melted to perfection. For even grilling, use a spatula to gently press down on the sandwiches during cooking.

Slice and Serve: After grilling, remove the sandwiches from the pan and let them rest for a minute to allow the gooey cheese to settle. Slice each sandwich in half diagonally and serve them warm. For additional flair, garnish with extra fresh basil leaves if desired.
