Ingredients

1 lb fresh salmon fillet, skin removed and cut into 1-inch cubes

1/2 cup teriyaki sauce (store-bought or homemade)

2 tablespoons honey

2 tablespoons fresh ginger, minced

2 cloves garlic, minced

1 tablespoon sesame oil

1 red bell pepper, cut into 1-inch cubes

1 green bell pepper, cut into 1-inch cubes

1 small red onion, cut into wedges

8-10 bamboo skewers (soaked in water for 30 minutes)

Sesame seeds and sliced green onions for garnish

Instructions

Marinate the Salmon: In a medium-sized mixing bowl, whisk together the teriyaki sauce, honey, minced ginger, garlic, and sesame oil until well combined. Reserve 2 tablespoons of this marinade for later basting. Add the cubed salmon to the remaining marinade, ensuring each piece is well coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.

Prepare the Skewers: While the salmon is marinating, wash and cut the bell peppers and red onion into bite-sized pieces. Once the salmon has marinated, take the soaked bamboo skewers and begin threading the ingredients. Alternate between placing salmon cubes and vegetable pieces on each skewer—this not only looks appealing but also ensures a balanced flavor with each bite.

Preheat the Grill: Preheat your grill to medium-high heat (approximately 400°F or 200°C). If you're using a grill pan indoors, heat it over medium-high heat and lightly brush with oil to prevent sticking.

Grill the Skewers: Once the grill is hot, carefully place the skewers on the grill surface. Grill the skewers for about 4-5 minutes on each side, using the reserved teriyaki marinade to baste them periodically for extra flavor and moisture. Be cautious not to overcook the salmon; it should be slightly opaque and flake apart easily when done.

Garnish and Serve: After grilling, remove the skewers from the grill and allow them to rest for a minute. For an attractive presentation, sprinkle the skewers with sesame seeds and garnish with sliced green onions. These delicious skewers can be served over a fluffy bed of rice or alongside steamed vegetables for a wholesome meal.
