For the Grilled Salmon:

4 salmon fillets (6 oz each)

2 tablespoons extra virgin olive oil

1 tablespoon honey

2 teaspoons low-sodium soy sauce

1 teaspoon garlic powder

1 teaspoon freshly ground black pepper

1 teaspoon sea salt

Juice of 1 fresh lime

For the Pineapple Salsa:

1 cup fresh pineapple, diced into small cubes

1/2 red bell pepper, finely chopped

1/4 red onion, finely chopped

1 jalapeño, seeded and minced (omit for less heat)

1/4 cup fresh cilantro leaves, chopped

Juice of 1 fresh lime

Sea salt and freshly ground black pepper, to taste

Instructions
 

Marinate the Salmon:

    - In a small mixing bowl, combine the extra virgin olive oil, honey, low-sodium soy sauce, garlic powder, black pepper, sea salt, and the juice of 1 lime. Whisk until well blended.

      - Place the salmon fillets into a shallow dish, ensuring they are in a single layer. Pour the marinade over the salmon, turning the fillets to coat them evenly. Cover with plastic wrap and refrigerate for at least 30 minutes to 1 hour, allowing the flavors to infuse into the fish.

        Prepare the Pineapple Salsa:

          - In a medium-sized bowl, add the diced fresh pineapple, finely chopped red bell pepper, chopped red onion, minced jalapeño (if using), and chopped cilantro.

            - Squeeze the juice of 1 lime over the salsa mixture and sprinkle with sea salt and freshly ground black pepper. Mix well to combine all ingredients thoroughly. Set aside to allow the flavors to meld.
