Grilled Peach & Chicken Caprese Melts

Ingredients
  

2 ripe peaches, pitted and halved

2 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

4 slices fresh mozzarella cheese

1 cup fresh basil leaves

4 slices of ciabatta bread

2 tablespoons balsamic glaze

Optional: 1 teaspoon garlic powder, crushed red pepper flakes for an extra kick

Instructions
 

Prepare the Grill: Begin by preheating your grill or grill pan over medium-high heat. To ensure that your food doesn’t stick, brush the grill grates with a little olive oil.

    Season the Chicken: Take the chicken breasts and rub them thoroughly with olive oil, then season generously with salt, pepper, and optional garlic powder for additional flavor. Allow the seasoned chicken to rest for about 5 minutes, letting the flavors absorb into the meat.

      Grill the Chicken: Once the grill is ready, place the seasoned chicken breasts directly on the grill. Cook for approximately 6-7 minutes on each side, or until the chicken is fully cooked and has an internal temperature of 165°F (75°C). Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing.

        Grill the Peaches: While the chicken is resting, take the peach halves and place them cut-side down on the grill. Grill the peaches for about 4-5 minutes until they develop beautiful grill marks and become slightly tender. Once grilled, remove them from the grill and set aside.

          Assemble the Melts: On a clean flat surface, lay out the ciabatta slices. On two of the slices, layer the sliced grilled chicken, the grilled peach halves (cut side facing up), a slice of fresh mozzarella cheese, and a generous handful of fresh basil leaves. Finish by drizzling balsamic glaze over the top. Place the remaining ciabatta slices on top to create sandwiches.

            Grill the Melts: Return the assembled sandwiches to the grill. Gently press down on each sandwich to ensure contact with the grill. Grill for about 4 minutes on each side, or until the ciabatta is golden brown and the mozzarella is deliciously melted.

              Serve: Once the melts are grilled to golden perfection, remove them from the grill and slice each sandwich in half. Serve warm to enjoy the delightful combination of sweet, savory, and fresh flavors!
