Ingredients

2 large flatbreads (store-bought or homemade)

1 cup of pizza sauce (your preferred brand or homemade)

2 cups of shredded mozzarella cheese

1 cup of colorful bell peppers, thinly sliced (use a mix of red, yellow, and green for visual appeal)

½ cup of red onion, thinly sliced

1 cup of cherry tomatoes, halved

1 cup of fresh spinach leaves

1 teaspoon of Italian seasoning

½ teaspoon of garlic powder

Olive oil for brushing

Fresh basil leaves, for garnish

Red pepper flakes (optional, for a spicy kick)

Instructions

Preheat the Grill: Prepare your grill for cooking by setting it to medium-high heat, approximately 400°F (200°C). For charcoal grills, allow the coals to become hot and covered in white ash before grilling.

Prepare the Flatbreads: Take both flatbreads and brush each side generously with olive oil. This will help them cook evenly and develop a beautiful grill mark. On one side, sprinkle garlic powder and Italian seasoning for added flavor.

Grill the Flatbreads: Place the flatbreads on the grill with the seasoned side facing down. Grill for about 2-3 minutes, or until you see nice grill marks. Flip the flatbreads over and grill the other side for an additional 2-3 minutes. Once done, carefully remove from the grill and set them aside.

Assemble the Pizza: On the grilled side of each flatbread, generously spread pizza sauce to your liking. Evenly distribute shredded mozzarella cheese over the sauce, followed by the thinly sliced bell peppers, red onion, halved cherry tomatoes, and fresh spinach leaves. If you want extra flavor, feel free to sprinkle a bit more Italian seasoning over the top.

Grill the Pizza: Return the topped flatbreads to the grill carefully. Close the lid and grill for another 4-6 minutes, keeping a close eye on them to prevent burning. Look for the cheese to melt and become bubbly — that’s when they’re perfect!

Garnish and Serve: Once your delicious flatbread pizzas are ready, take them off the grill and allow them to cool for a minute. Garnish with fresh basil leaves and, if desired, a sprinkle of red pepper flakes to give it a spicy twist. Slice into pieces and enjoy your flavorful creation!

Prep Time: 15 minutes | Total Time: 25 minutes | Servings: 4 servings

Presentation Tips: Serve the flatbread pizzas on a wooden cutting board or a large platter for a rustic look. Add a small bowl of extra pizza sauce on the side for dipping!
