Ingredients

4 slices of sourdough bread

1 cup fig jam

4 oz creamy goat cheese, softened to room temperature

4 oz sharp white cheddar cheese, finely grated

2 tbsp unsalted butter, softened

1 tsp fresh thyme leaves (optional, for added flavor)

1/4 tsp freshly ground black pepper

1/4 tsp sea salt

Instructions

Prep the Bread: Take four slices of sourdough bread and spread a thin, even layer of softened butter on one side of each slice. This buttery layer is key to achieving a beautifully golden and crispy crust once grilled.

Assemble the Sandwich: On the unbuttered side of two slices, spread a generous amount of fig jam, making sure to cover the entire surface for maximum flavor.

Add Cheeses: On top of the fig jam, evenly dollop the softened goat cheese. Sprinkle freshly ground black pepper and sea salt over the cheese. If using, add a light sprinkle of fresh thyme leaves for an aromatic touch. Finally, add a layer of the grated sharp white cheddar cheese on top.

Top and Grill: Place the remaining two slices of bread on top of the prepared halves, ensuring the buttered sides are facing up. Preheat a non-stick skillet or griddle over medium heat until hot. Carefully place the assembled sandwiches into the skillet.

Cook Until Golden: Grill the sandwiches for about 3-4 minutes on the first side. Watch for a beautiful golden-brown color and a crispy texture. For a better melt, gently press down with a spatula during cooking.

Flip and Repeat: Once the first side is golden, carefully flip the sandwiches using a spatula. Grill the second side for an additional 3-4 minutes, until it achieves the same golden and crispy texture and the cheeses are gooey and melted.

Slice and Serve: Remove the sandwiches from the skillet and allow them to rest for about a minute. Slice each sandwich in half diagonally for easy eating. Serve hot, optionally drizzling a touch of extra fig jam on the side for additional sweetness.
