Ingredients

2 ears of fresh corn, husked

1 ripe avocado

100g feta cheese, crumbled

1 small red onion, finely chopped

1 medium ripe tomato, diced

1 tablespoon fresh lime juice

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

4 slices of sourdough bread

Fresh cilantro, chopped (for garnish)

Optional: Red chili flakes for a touch of heat

Instructions

Grill the Corn: Preheat your grill to medium-high heat. Place the husked corn directly on the grill grates. Grill the corn for approximately 8-10 minutes, turning occasionally, until the kernels are tender and have a nice char. Once grilled, remove the corn from the grill and let it cool for a few minutes until it can be handled comfortably.

Prepare the Avocado Mixture: While the corn is cooling, cut the avocado in half, remove the pit, and scoop the flesh into a mixing bowl. Add the fresh lime juice, olive oil, smoked paprika, and season with salt and pepper. Use a fork to mash the ingredients together until the mixture is creamy yet retains some texture.

Cut the Corn Off the Cob: Once the corn has cooled enough to handle, take a sharp knife and carefully cut the kernels off both sides of the cob. Collect the kernels in a bowl.

Incorporate Remaining Ingredients: In a separate mixing bowl, combine the freshly cut corn kernels, crumbled feta cheese, finely chopped red onion, and diced tomato. Season the mixture with additional salt and pepper to taste, mixing gently to combine all the flavors.

Toast the Bread: Preheat a non-stick skillet or griddle over medium heat. Add the slices of sourdough bread and toast them until they are golden brown and crispy on both sides, approximately 2-3 minutes per side.

Assemble the Toast: Take each slice of toasted sourdough and spread a generous layer of the avocado mixture over the top. Follow this by adding the grilled corn and feta mixture, ensuring even distribution for each toast.

Garnish and Serve: Finish by sprinkling freshly chopped cilantro over the top of each toast. If you enjoy a bit of spice, feel free to add a sprinkle of red chili flakes for an added kick. Serve the toast warm, enjoying the delightful combination of flavors immediately.
