2 boneless, skinless chicken breasts

2 ripe peaches, halved and pitted

4 cups mixed salad greens (such as baby spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

½ cup crumbled feta cheese

¼ cup red onion, very thinly sliced

¼ cup walnuts, toasted for extra flavor

3 tablespoons olive oil, divided

2 tablespoons balsamic vinegar

1 tablespoon honey

Salt and freshly ground black pepper to taste

Fresh basil leaves for garnish

Marinate the Chicken: In a small bowl, combine 2 tablespoons of olive oil with salt and freshly ground black pepper. Coat the chicken breasts evenly with this mixture. Allow the chicken to marinate in the refrigerator for at least 30 minutes to enhance the flavors.

    Grill the Chicken: Preheat your grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side, or until the internal temperature registers 165°F (75°C).
