2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 tablespoon dried oregano

1 teaspoon garlic powder

Zest of 1 lemon

Salt and freshly ground black pepper to taste

For the Pasta Salad:

8 ounces rotini or penne pasta

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

For the Dressing:

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 tablespoon honey

1 teaspoon dried oregano

Salt and freshly ground black pepper to taste

Instructions
 

Marinate the Chicken:

    - In a mixing bowl, combine olive oil, dried oregano, garlic powder, lemon zest, salt, and pepper. Whisk until blended. Place the chicken breasts into a resealable plastic bag, pour the marinade over them, ensuring they are thoroughly coated. Seal the bag and refrigerate for at least 30 minutes, or up to 2 hours for enhanced flavor.

      Cook the Pasta:
