2 boneless, skinless chicken breasts

2 tablespoons olive oil, divided

1 teaspoon Italian seasoning

1 cup cherry tomatoes, halved

2 cloves garlic, minced

¼ cup fresh basil, chopped

1 tablespoon balsamic vinegar

½ cup mozzarella cheese, cubed

Grated Parmesan cheese, for serving

Optional: red pepper flakes for extra heat

Cook the Pasta: Fill a large pot with water, add a generous amount of salt, and bring it to a rolling boil. Carefully add the pasta and cook according to the package instructions until al dente (typically about 8-10 minutes). Once cooked, drain the pasta in a colander, but be sure to reserve about a cup of the starchy pasta water for later use.

    Grill the Chicken: While the pasta is cooking, prepare your grill or grill pan by preheating it to medium-high heat. Drizzle 1 tablespoon of olive oil over the chicken breasts, then season them generously with salt, pepper, and Italian seasoning. Grill the chicken for approximately 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C). Once cooked, remove them from the grill and allow them to rest for a few minutes before slicing them into thin strips.

      Sauté the Tomatoes: In a large skillet over medium heat, pour in the remaining tablespoon of olive oil.
