1 lb boneless, skinless chicken breast, cut into 1-inch cubes

2 ripe peaches, pitted and sliced into wedges

1 red bell pepper, diced into 1-inch pieces

1 small red onion, cut into quarters

3 tbsp extra virgin olive oil

2 tbsp honey

2 tbsp soy sauce (low sodium preferred)

1 tsp garlic powder

1 tsp ground ginger

1 tsp smoked paprika

Salt and freshly cracked black pepper, to taste

Fresh basil or cilantro leaves, for garnish

Skewers (if using wooden skewers, soak them in water for at least 30 minutes prior to grilling)

Prepare the Marinade: In a medium-sized mixing bowl, combine the olive oil, honey, soy sauce, garlic powder, ground ginger, smoked paprika, and a generous pinch of salt and pepper. Whisk vigorously until the mixture is well blended. Reserve 2 tablespoons of this marinade for later basting.

    Marinate the Chicken: Place the cubed chicken breast into the bowl with the marinade. Toss to coat the chicken evenly in the sauce. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the chicken to soak up the flavors. If you have time, marinating for up to 2 hours will enhance the taste even further.

      Skewer the Ingredients: Take the marinated chicken out of the refrigerator. Begin threading the skewers by alternating between the chicken cubes, peach wedges, red bell pepper pieces, and onion quarters.
