Ingredients

4 slices of sourdough bread

2 tablespoons unsalted butter, softened

1 cup sharp cheddar cheese, grated

1/2 cup Gruyère cheese, grated

1/4 cup cream cheese, softened

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon fresh chives, chopped (optional for garnish)

Salt and pepper to taste

Instructions

Prepare the Cheese Mixture: In a medium mixing bowl, combine the grated sharp cheddar, Gruyère cheese, and softened cream cheese. Add the Dijon mustard, garlic powder, and chopped fresh chives (if using). Mix thoroughly until all ingredients are well incorporated and set the mixture aside.

Butter the Bread: Take each slice of sourdough bread and spread a generous layer of softened unsalted butter on one side. This buttery layer will create a beautifully golden crust during grilling.

Assemble the Sandwich: On a clean surface, lay out two slices of bread with the buttered sides facing down. Evenly distribute the cheese mixture on top of these slices. Place the remaining two slices of sourdough bread on top, buttered side facing up, forming two complete sandwiches.

Preheat the Grill: Heat a non-stick skillet or a griddle over medium heat until it’s hot but not smoking.

Grill the Sandwiches: Carefully place the assembled sandwiches in the skillet. Cook for approximately 4-5 minutes, or until the bottom slice is a rich golden brown. Using a spatula, gently flip the sandwiches to grill the other side for another 4-5 minutes, pressing down slightly to ensure even cooking.

Melt and Flip: Lower the heat to medium-low, if necessary, and cover the skillet with a lid for 1-2 minutes during the second grilling. This step will help the cheese melt perfectly.

Check Doneness: Remove the sandwiches from the skillet when both sides are crispy and golden brown, with melted cheese oozing out from the sides.

Serve: Allow the sandwiches to rest for about a minute before slicing them diagonally to expose the deliciously gooey cheese inside. Optionally, garnish with extra chopped chives and serve hot, accompanied by a side of tomato soup for dipping.
