Ingredients

6 large eggs

1 cup shredded sharp cheddar cheese

1/2 cup diced green chilies (canned or fresh, mild or hot based on preference)

1/4 cup milk

1/4 teaspoon garlic powder

Salt and pepper to taste

8 slider buns (sweet Hawaiian or regular)

2 tablespoons butter, for toasting buns

Optional toppings: sliced avocado, sliced jalapeños, fresh salsa, or chopped fresh cilantro

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). This step is essential if you plan on toasting the assembled sliders to achieve a golden finish.

Prepare the Egg Mixture: In a large mixing bowl, crack the six eggs and add the milk, garlic powder, diced green chilies, along with a pinch of salt and pepper. Whisk the mixture vigorously until all ingredients are well combined and the eggs are frothy.

Cook the Eggs: Heat a non-stick skillet over medium heat and pour in the prepared egg mixture. Allow the eggs to cook gently, stirring occasionally. Keep an eye on them; you want them to be soft and slightly runny (about 5-7 minutes). Remove from heat when they are nearly set.

Add Cheese: Just before the eggs are fully cooked, gradually sprinkle the shredded cheddar cheese over the top. Stir gently to combine and allow the heat to melt the cheese into the egg mixture. Once fully melted and mixed, remove it from the heat.

Toast the Buns: In a separate skillet or griddle over medium heat, melt the 2 tablespoons of butter. Place the slider buns cut side down in the skillet and toast until they are golden brown and slightly crispy, about 1-2 minutes per side.

Assemble the Sliders: Take the bottom half of each toasted slider bun and place a generous scoop of the spicy green chili egg and cheese mixture on top. Feel free to add any of the optional toppings such as sliced avocado, jalapeños, or fresh cilantro to enhance the flavor.

Finish the Sliders: Cap each slider with the top half of the bun. If you like, you can return the sliders to the oven for about 5 minutes. This will allow them to warm through and meld the flavors even more.

Serve: Once removed from the oven, serve the sliders warm. A side of fresh salsa for dipping will elevate the experience. Enjoy your delicious Spicy Green Chili Egg and Cheese Sliders!
