1 cup uncooked long-grain white rice

2 cans (7 oz each) diced green chilies, drained

1 can (15 oz) black beans, drained and rinsed thoroughly

1 cup corn kernels (can be fresh or frozen)

2 cups low-sodium chicken broth

1 cup shredded sharp cheddar cheese

1 cup sour cream

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional, for extra heat)

Salt and freshly ground black pepper to taste

1 tablespoon extra virgin olive oil

Fresh cilantro, chopped (for garnish)

Preheat the oven: Set your oven to 375°F (190°C) to warm up while you prepare the casserole.

    Sauté the chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken along with the chopped onion and minced garlic. Cook for approximately 5-7 minutes, stirring occasionally, until the chicken is no longer pink and is fully cooked. Season with salt, pepper, ground cumin, smoked paprika, and cayenne pepper if you prefer an extra kick.

      Combine ingredients: In a large mixing bowl, combine the sautéed chicken mixture with the uncooked rice, drained green chilies, black beans, corn kernels, chicken broth, and sour cream.
