Ingredients
  

8 oz. rotini or fusilli pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 medium red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh oregano, chopped (or 1 tablespoon dried oregano)

For the Tzatziki Dressing:

1 cup Greek yogurt

1 small cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

1 tablespoon fresh lemon juice

1 tablespoon extra virgin olive oil

Salt and pepper to taste

Fresh dill, for garnish (optional)

Instructions
 

Cook the Pasta:

    Bring a large pot of salted water to a rolling boil. Add the rotini or fusilli pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta and rinse it under cold water to halt the cooking process. Set the pasta aside in a large mixing bowl.

      Prepare the Tzatziki Dressing:

        In a medium mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, salt, and pepper. Stir the mixture well until it forms a smooth and creamy dressing. Taste the dressing and adjust the seasoning as desired. For best flavor, cover and refrigerate the dressing while you prepare the salad.

          Combine Salad Ingredients:

            To the bowl with your cooled pasta, add the halved cherry tomatoes, diced cucumber, finely chopped red onion, sliced Kalamata olives, crumbled feta cheese, chopped parsley, and fresh oregano. Gently toss all the ingredients together until mixed evenly.
