Ingredients

For the Loaf:

1 ½ cups all-purpose flour

1 tablespoon poppy seeds

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened to room temperature

1 cup granulated sugar

2 large eggs, at room temperature

Zest of 1 large lemon (about 1 tablespoon)

½ cup buttermilk, at room temperature

1 teaspoon pure vanilla extract

2 tablespoons fresh lemon juice

For the Glaze:

1 cup powdered sugar

2-3 tablespoons fresh lemon juice (more or less for desired consistency)

Zest of 1 lemon (optional, for extra zing)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x5-inch loaf pan by greasing it well or lining it with parchment paper to ensure easy removal after baking.

Combine Dry Ingredients: In a medium mixing bowl, thoroughly whisk together the all-purpose flour, poppy seeds, baking powder, baking soda, and salt until fully combined. Set this mixture aside for later.

Cream Butter and Sugar: In a large mixing bowl, use an electric mixer on medium speed to cream together the softened butter and granulated sugar. Mix until the mixture is light and fluffy, which should take about 3-4 minutes.

Incorporate Eggs and Flavorings: Next, add the eggs to the butter-sugar mixture one at a time, ensuring to mix well after each addition. Once the eggs are fully incorporated, add the lemon zest, buttermilk, vanilla extract, and fresh lemon juice. Mix until just combined.

Mix Dry Ingredients: Gradually introduce the reserved dry ingredients to the wet mixture. Stir gently just until you see no dry flour remaining—be cautious not to over-mix; a few lumps are perfectly fine.

Transfer to Pan: Pour the batter into your prepared loaf pan, using a spatula to smooth the top for an even finish.

Bake: Place the loaf in the preheated oven and bake for 50-60 minutes. The loaf is done when a toothpick inserted into the center comes out clean. If the top is browning too quickly, lightly tent the loaf with aluminum foil to prevent burning.

Cool the Loaf: Once baked, remove the loaf from the oven and let it rest in the pan for about 10 minutes. After that, transfer the loaf to a wire rack to cool completely.

Prepare the Glaze: While the loaf is cooling, prepare the glaze by whisking together the powdered sugar and 2 tablespoons of fresh lemon juice in a medium bowl. If desired, add the lemon zest for an extra burst of flavor. Adjust the glaze's consistency by incorporating additional lemon juice as needed.

Glaze the Loaf: Once the loaf has completely cooled, drizzle the prepared glaze over the top, allowing it to cascade down the sides for an appealing presentation. Let the glaze set for a few minutes before slicing.

Serve and Enjoy: Slice the loaf into thick, generous pieces and savor this moist, zesty delight alongside a comforting cup of tea or coffee!
