Ingredients

2 boneless chicken breasts, diced into bite-sized pieces

2 tablespoons fresh ginger, minced

3 cloves garlic, minced

3/4 cup teriyaki sauce (store-bought or homemade)

1 tablespoon sesame oil

1 tablespoon olive oil

4 cups chicken broth

2 packs of instant ramen noodles (discard the seasoning packets)

1 cup broccoli florets

1 cup sliced carrots

1 cup snap peas

1/2 cup green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Instructions

Preheat Your Oven: Start by preheating your oven to 375°F (190°C) to prepare for baking.

Sauté the Chicken: Heat the olive oil in a large skillet over medium heat. Once hot, add the diced chicken along with the minced ginger and garlic. Sauté for approximately 5-7 minutes, stirring occasionally until the chicken is no longer pink and golden brown. Season with salt and pepper to enhance the flavors.

Incorporate Teriyaki Sauce: Pour the teriyaki sauce and sesame oil over the sautéed chicken. Stir well to ensure all pieces are coated. Allow the mixture to simmer for about 2-3 minutes until the sauce thickens slightly. Remove from heat and set aside to let the flavors meld.

Prepare Ramen Noodles: In a large pot, bring the chicken broth to a boil. Add the instant ramen noodles and cook them for 2-3 minutes, just until they start to soften (be careful not to overcook, as they will continue cooking during the bake). Once ready, drain and set the noodles aside.

Blanch the Vegetables: In the same pot with the remaining chicken broth, add the broccoli florets, sliced carrots, and snap peas. Stir and let them simmer for 3-4 minutes until they are slightly tender but still crisp. Remove from heat and drain any excess liquid.

Combine Ingredients: In a large mixing bowl, combine the sautéed chicken along with the teriyaki sauce, softened ramen noodles, and the blanched vegetables. Mix thoroughly to ensure all ingredients are evenly coated with the sauce.

Transfer to Baking Dish: Take a greased 9x13-inch baking dish and pour the combined mixture into it. Spread the mixture evenly across the dish.

Bake: Place the baking dish in the preheated oven and bake for about 20-25 minutes, until the edges are bubbling and the top is lightly golden.

Garnish and Cool: Remove the dish from the oven and allow it to cool for a few minutes. Just before serving, sprinkle chopped green onions and sesame seeds on top for an added crunch and burst of flavor.

Serve and Enjoy: Serve warm portions of your delicious Ginger Teriyaki Chicken Ramen Bake and savor the delightful combination of flavors!
