Ingredients

4 ripe peaches, pitted and thinly sliced

1 tablespoon fresh ginger, peeled and finely sliced

6 cups water, divided

4 black tea bags (or 4 tablespoons loose black tea)

½ cup sugar (adjust to taste; can substitute with honey)

Fresh mint leaves, for garnish

Ice cubes

Instructions

Prepare the Peach-Ginger Infusion: In a medium saucepan, combine the sliced peaches and fresh ginger. Pour in 2 cups of water and bring the mixture to a gentle boil over medium heat. This step allows the flavors from the peaches and ginger to blend beautifully. Reduce the heat and let it simmer for about 10 minutes to fully extract the essence.

Brew the Tea: While the peach-ginger infusion simmers, pour the remaining 4 cups of water into another pot and bring it to a boil. Once boiling, remove from heat and add the black tea bags (or loose black tea). Let it steep for about 5-7 minutes, allowing the flavors to develop into a robust tea.

Combine Mixtures: After simmering, take the peach-ginger mixture off the heat. Strain the contents into a bowl or pitcher, using a fine mesh sieve or cheesecloth to separate the solids. Press the solids gently to extract as much juice as possible before discarding them.

Mix Tea and Sweetener: In the pitcher with the strained peach and ginger liquid, carefully add the brewed tea and your choice of sweetener (sugar or honey). Stir thoroughly until the sweetener is completely dissolved. Adjust the sweetness to your liking.

Cool Down: Allow the mixture to cool to room temperature. Once cooled, transfer it to the refrigerator and chill for at least 1-2 hours, or until it’s refreshingly cold.

Serve: To serve, fill tall glasses with ice cubes. Pour the chilled Ginger Peach Iced Tea over the ice. Garnish each glass with fresh mint leaves and additional slices of peach for an appealing presentation.

Enjoy: Relish in the delightful flavors of this refreshing beverage, perfect for cooling off on a hot sunny day!
