1 pound radishes, trimmed and halved

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon sea salt (adjust to taste)

½ teaspoon black pepper (freshly ground is best)

2 tablespoons fresh parsley, chopped (for garnish)

Juice of 1 lemon (optional, for added brightness)

Preheat the Oven: Start by preheating your oven to 425°F (220°C). To simplify the cleanup later, line a baking sheet with parchment paper.

    Prepare the Radishes: In a large mixing bowl, place the halved radishes. This will allow for more consistent roasting and enhance their caramelization.

      Mix the Seasoning: In a separate small bowl, whisk together the olive oil, minced garlic, dried thyme, dried rosemary, sea salt, and black pepper until the mixture is well combined and aromatic.

        Coat the Radishes: Pour the seasoned olive oil mixture over the radishes. Using your hands or a spatula, toss the radishes thoroughly until they're evenly coated with the delicious seasoning blend.

          Spread on the Baking Sheet: Transfer the seasoned radishes onto the prepared baking sheet, spreading them out in a single layer. Make sure not to overcrowd them, as this allows for proper roasting and a beautiful golden-brown finish.
