1 can (15 oz) chickpeas, drained and rinsed

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

4 large whole wheat or spinach wraps

1 cup fresh mixed greens (arugula, spinach, or kale)

1 medium cucumber, thinly sliced

1 medium tomato, diced

½ cup hummus (store-bought or homemade)

¼ cup feta cheese, crumbled (optional)

Lemon wedges, for serving

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C). To make cleanup easier, line a baking sheet with parchment paper.

    Prepare the Chickpeas: In a medium mixing bowl, add the drained and rinsed chickpeas. Pour in the olive oil, followed by the minced garlic, smoked paprika, ground cumin, dried oregano, dried thyme, and a pinch of salt and pepper. Toss the chickpeas thoroughly until they are evenly coated in the seasoning mixture.

      Roast the Chickpeas: Spread the seasoned chickpeas out in a single layer on the prepared baking sheet. Roast them in the preheated oven for 25-30 minutes, making sure to shake the pan halfway through to ensure even cooking. The chickpeas should be golden brown and crispy when done.

        Assemble the Wraps: While the chickpeas are roasting, take your wraps and lay them flat on a clean surface. Spread a generous layer of hummus across the center of each wrap.

          Add Fresh Ingredients: On top of the hummus, layer the fresh mixed greens, followed by the sliced cucumber and diced tomato. Once the chickpeas are ready and slightly cooled, add them on top of the vegetables. If desired, sprinkle crumbled feta cheese over the top for an additional burst of flavor.
