8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter, divided

4 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and black pepper, to taste

1 cup cherry tomatoes, halved

2 cups fresh spinach

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a vigorous boil. Add the fettuccine pasta and cook according to package instructions until al dente. Before draining, reserve 1/2 cup of the pasta cooking water for later use. Drain the pasta and set aside.

    Prepare the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes. Sauté for 1-2 minutes until the garlic becomes fragrant, ensuring not to let it burn.

      Cook the Shrimp: Add the shrimp to the skillet and sprinkle with salt and black pepper. Cook the shrimp for about 2-3 minutes on each side or until they turn pink and opaque. Once cooked, remove the shrimp from the skillet and set them aside on a plate.

        Make the Cream Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese and mix until it melts and the sauce is creamy. If you find the sauce too thick, gradually add some of the reserved pasta water until it reaches your desired consistency.
